In general, all the recipes in this podcast live by the following principles, unless otherwise specified:

*Olive oil is extra virgin
*Salt is kosher
*Pepper is freshly ground black pepper
*Butter is salted or unsalted–depends on what I have, but I don’t believe it makes enough of a difference in the end to get worked up about. You should always taste your dishes for salt regardless.
*My stove is a plain old workhorse home stove–no crazy restaurant-level heat.
